the Managing Director for the Group and one of the talented

 

owners. He has garnered his wonderful vision and skills by 

 

working at many Michelin starred establishments including 

 

Gordan Ramseys, Marcus Waring's L'Oranger and Chez Nico.

Who would prepare it?
Albert Roux Senior, the most orthodox Chef that ever lived.

 

Who would be invited?
My mum, to teach her something about food, my son to let him enjoy the day, my girlfriend for good conversation and Bono, as not only a hero of mine, but very educated in food!


Where would it take place?
In the restaurant I spent New Year’s Eve 1999, name unimportant - in fact unknown, back street in Brussels, bursting with charm and character, and full of good memories.


What music would you listen to?
Not important - conversation would rule. Perhaps Madhouse by REM, quite apt.

 

What dishes would you eat?

Baked beans on toast with melted cheese and cracked black pepper (full of nostalgia something that everyone can enjoy and relate to)

Roast saddle of venison with red cabbage and cranberry jus (touch of extravagance, and a marriage of flavours made in heaven)

Roquefort cheese with crusty baguette (simple but delicious, no pudding can compare to having that in the middle of the table)

Like all good suppers must be enjoyed with a ballsie red washing down every course!!
