About us
Head chef Wesley Hammond, previously of Neil Morrissey’s
Hurst House, Laugharne and The Old Post Office, St Fagans,
leads the Woods team, supported by Sous chef Steve Raisis.
Wes loves the outdoors and spends his time away from the
kitchen shooting for game, sea fishing and is a keen forager.
Our Restaurant Manager is Gareth Hickey, a new but fantastic
welcoming face at the front of house. Gareth is helped
by the charming Assistant Manager, Francois Commeureuc.

Line caught sea bass, peas a la francaise and a mussel and
saffron chowder.
